I really love SE Asian cooking -- not just Thai, but Vietnamese as well, and what little Cambodian and Filipino food I've had -- because it's strongly spiced, even hot (and I got my Pad Thai last night what the restaurant I go to calls "Thai hot", which, to me, implies that the dude thinks it's too hot for us wussy Americans; well, bring it ON, baby), but, at the same time, it's not overwhelmed by the hotness, as, say, Mexican food, or Szechwan Chinese dishes, can be. Like a good curry, or pad thai, or pho, or adobo...mmmmmm
