In reference to my last post, a few additional notes.

As it turns out, the flour i used in the cookies was not white whole wheat flour, but just plain old white flour. My mom was apparently unaware of what kind of flour she had. I tried it with white whole wheat flour today and they did not turn out so well. So i am hereby forced for culinary reasons to withdraw my support for the use of white whole wheat flour and instead recommend that you use regular white flour if you make them.

Also, i discovered something that should have been obvious to me but was not. Coconut oil is very soft at room temperature, but even slight changes in temperature can make it rather hard. That being said, i recommend that you first throughly blend the coconut oil, sugar, salt and baking soda first, and then add the water, egg and vanilla before continuing with the recipe.

The time may need to be adjusted for different ovens; in my parents over which is a regular size oven it was about 14 min. My oven is very small and the time was about 10 mins.

If you have an electric mixer i would use that. This batch didn't hold together as well. This is probably due in part to the different flour and the unevenly distributed oil, but i think haveing the living shit beat our of it with a batter paddle in an electric mixer helps.

Finally, the bottoms of the cookies from my first batch were perfect. Today's batch were a little more browned. Not quite burned, but not as nice all the same. Again, there are multiple variables that could have contributed, but the cookie sheet i used for the first batch was the kind that has a sealed air pocket in it, while today's batch was baked on a standard baking sheet, so that may make a difference.
