here's a great soup i just made
you vegans can go nuts too
Tomato Gin soup
big ol can of crushed tomatoes (24oz)
garlic
fennel seed
fresh parsley 1 bunch will do chop up the stalks!
nice big can of v8 juice (or tomato if you hate v8)
onion chopped (1 large)
celery chopped (about six stalks)
carrots chopped (2 will do)
gin..(good gin like bombay is what i prefer)
so put about 3 tablespoons of olive oil in your soup pot
then cook the garlic,fennel,onions,celery,parsley stalks and carrots till the onions are clear..dont let them get brown!!
then add the gin...check for quality gin mmmm
cook it out (sorry kids) then add your crushed tomatoes and tomato juice and simmer for about 20 minutes then add the parsley...yummy
