I just saw Eternal Sunshine as well and it completely took me by surprise. I hadn't wanted to see it because the trailers looked lame, but I happened to be at the theater at the time it was playing. In the movies, they kinda are coming from the back of his hand through his knuckles. It looks like they pass through in between them. As for the bending at the wrist, I seem to recall seeing x-rays in the books that show the claws completly retracted into his forearm. So, in theory, he can't have them halfway out without keeping his wrist straight.
