1. trim all fat from 1lb of round steak and cut meat into 2 inch strips.
2. heat 2 tbsp of vegetable oil in a large pan, add 2 tbsp of curry paste and cook over medium heat for 30 seconds while stirring constantly.
3. add beef into pan and constantly stir until beef begins to brown and is throughly coated with curry.
4. add in 2 bay leaves, 1 3/4 cups of coconut milk, 1 1/4 cups of beef stock, 3 tbsp of lemon juice, 1/2 grated rind and juice from an orange, and 1 tbsp of granulated sugar to the food. bring to a boil and stir frequently.
5 add in 4oz of peeled baby pearl onions left whole and 8oz of halved potatoes. bring back to a boil then reduce heat and simmer uncovered for 5 minutes.
6. stir in 1 cup of unsalted peanuts roughly chopped, 4oz of halved green beans, and 1 red bell pepper thats thinly sliced. simmer for another 10 minutes until beef and potatoes are tender.
7. serve in a bowl and garnish with extra unsalted peanuts.
