Today I am sick...I have some sort of virus surging through my body that I can do nothing to stop.
Yet I am a Food Service Warrior and still went to work and sauted. Last night I was grill man as I usually am, one of my friends is in a cutody battle to keep her child and lost her case, so I was kinda out of it, I fucked up some stuff to begin with but then it got busy and I hit my zone where I no longer have to think I just cook. It only happens on really busy nights. I think it's a truely zen moment. I put out a thirty, ten and a couple little tables all with less than a 15 min ticket time. this is why I cook
