I'm so jealous of your mobility. To put in my 2 cents, I highly recommend Edinburgh. Fantastic city, wonderful people, great scene all around. It's actually really interesting from a city planning standpoint.
And if you can ever get there for New Years (or Hogmany, as they call it), I highly recommend it if you have the means... So choice.
