I made cow tongue tacos today, and they were delicious.

First I braised them in chicken stock with some veggies for about 4 hours.
I then let them sit in some stock while I reduced the braising liquid almost all the way, added some cayenne, chili flakes, cumin and a bit of tomato paste.

I then deep fried corn tortilla's with the tongue inside, slathered them with the sauce I made, and let people build-their-own tacos. And let me tell you, they were fucking mouth sex.
