toad in the hole
serves four
ingredients
sunflower oil
8 large good quality sausages
For the Batter
285ml or 1/2 a pint of milk
115g or 4oz plain flour
pinch of salt
3 eggs
method
preheat the oven to the hottest it'll go (250C/475F/gas mark 9)
mix the batter ingredients together with an electic whisk
put 1 cm of sunflower oil in the bottom of a baking tray with sides (looks like alot of oil, it's okay)
put the baking tray into the oven to heat the oil up, leave it for a good 20 mins or so, so it gets volcanic, otherwise when you put the batter in, it won't rise.
after the 20 mins put the sausages into the baking tray and cook til golden brown
pour over the batter all over the sausages (be careful, the oil is reeeally hot and will probably spit and bubble at you)
put the tray back into the oven and leave.
DO NOT OPEN THE OVEN for at least 20 mins after you've put the tray back in, otherwise the batter will not rise
the toad in the hole is cooked when the batter has risen and gone a nice crispy brown (about half an hour in my oven)
best served with mash potato and gravy!
