another successful cooking experiment tonight. Tesco had a 50% off sale on round steak, but I don't have a crockpot or dutch oven to braise it in, so I went the creole steak route.
heat some oil in a skillet, brown a chopped green pepper and onion then transfer to a big pot. cut .5-1kg of round steak into pieces, roll in a flour & spice mixture (salt, pepper, paprika, cajun seasoning) then brown in oil and transfer to pot. dump in a can of chopped tomatoes, a cup of water, a cup of concentrated beef broth (or water and a couple boullion cubes) and a cup of raw rice. bring to boil, then reduce to lowest heat and cover, simmering for 2 hours. if you like it more "spanish rice" style, add another 1/2 cup of rice, otherwise it will be gumbo style, fairly soupy.
