All right. It's 9:30am and I already want some chocolate. I have Chocolate cake mix, and no eggs. And i'm almost out of oil. (I need to hit up the 9'er.)
Sooo. My mom makes my brother's cakes all vegan with a crazazy recipe.
I'm going to make a cake using nothing but cake mix, and a can of soda.
Step 1.
Mix cake mix and 10 oz. soda (open a can and take 2 sips. I used diet cherry Pepsi.)
Step 2.
Bake as directed on box.
Cool! This makes a fat-free and low calorie cake. Of course adding frosting kills that, but theoretically you could just use powdered sugar or vegan buttercream frosting (since the cake is vegan anyway.) You can sort of taste the cola so next time I think I will use a Cream Soda. I'm also thinking maybe vanilla cake with root beer, or lemon cake with cherry soda. mmm
In gardening news, my plants are doing great. Seedlings are starting to emerge and I should have them in the ground by the end of March. I am growing an upside-down hanging cherry tomato plant. hanging the plant upside down eliminates the risk of ground insects and leaf diseases like blight. It also eliminates the need to tie up or stake the branches due to the weight of the fruit. Here's a pic of my baby plant.
This plant will actually live in the house because I have a nice big southern window that gets very warm. When I planted the vine in the hanger it pointed straight down, and after one day the fine curled back upward. Obviously because the plant stem and leaves need sun and automatically think they need to be upright. this is okay because this makes the branches stronger and able to carry more weight. I have alot of herb seeds germinating right now too so when they turn in to seedlings I will plant them in the top of the container. The roots won't fight for nutrients or water because I can control the nutrients by adding ripened compost and plenty of water. By the end of summer I will need to transfer them to a bigger hanging container like a 2 gallon bucket.
My strawberries are doing great in the window too..

And here's a pic of Calvin planting his "egghead". It's a hollowed out eggshell with soil and some wheatgrass seeds. When the wheatgrass grows it makes "hair" and we'll cut it when it gets long. (Susie frickin' homemaker huh?)
And lastly here's a pic of Calvin and my husband Rodney on Saturday at the park. We had a great time.
One day i'll stop and get in the picture too. lol
