oh man. two stages working with me on 2 consecutive nights. makes things hectic. so these guys come in and work a night for free and we evaluate their skill level, personality, and work habits. its a pretty stressful thing to go through and our kitchen is intimidating as hell to work in. you give them simple tasks, explain the way the kitchen is run, and basically hope they can line cook. dude last night was solid. strong knife skills, eager to learn, and learned quickly. paid attention and by the end of the night was running one of my stations with minimal management by me. guy tonight had a little slower learning curve, but you could tell he had some idea what he was doing. obviously not formally trained and needing lots of instruction. wasn't as proactive as the guy last night but worked well when given direction. it was pretty clear that once he understood what you wanted, he could hit it. not sure yet if he'll get hired. found out that they actually work together right now and guy from last night is the sous chef and guy from tonight is the lead line cook.
