phew. super busy at work today. i wasn't as pissed off today as yesterday, which is good because i needed to focus a lot more today. probably did close to 300 covers today. i worked saute/fry today, which is my 2nd favorite station in the causal outlet. when i was the sous chef there i worked either grill or ran the line from the pass (which is pretty fun), but since i'm the banquet sous these days and just lending a hand, i let their grill line cook take his station.

i like saute because everything you cook is very fragile, and takes great timing. plus the organization to know what you can do in advance while dupes are on "order" and what you need to get done that's been "fired" and figuring out how to fit it all onto your limited stove space. all while paying attention to the stuff frying away.

i probably ran through all my mise en place about 4 times over today. which meant finishing a rush and running to restock. sometimes having to decide whether stocking or taking a piss was more important at that moment. i chose to take a piss at one point, and kinda got fucked over.

off tomorrow and monday. taking a trip to denver to visit friends, buy them a wedding present, and get some new clothes for the wedding. apparently there is going to be lots of PBR and a crawfish boil, which i am very excited about. it'll be nice to get the fuck out of vail for a nigh.



Arapahoe Basin closes tomorrow, officially ending the Colorado ski season
