I was curious what Valentines Day was all about, so I went and looked it up. What I found was this:
One legend contends that Valentine was a priest who served during the third century in Rome. When Emperor Claudius II decided that single men made better soldiers than those with wives and families, he outlawed marriage for young men his crop of potential soldiers. Valentine, realizing the injustice of the decree, defied Claudius and continued to perform marriages for young lovers in secret. When Valentines actions were discovered, Claudius ordered that he be put to death.
This one is interesting too:
According to one legend, Valentine actually sent the first valentine greeting himself. While in prison, it is believed that Valentine fell in love with a young girl who may have been his jailors daughter who visited him during his confinement. Before his death, it is alleged that he wrote her a letter, which he signed From your Valentine, an expression that is still in use today.
So, whatever the reason we celebrate this holiday, here it is again.
Ive never been much for celebrating it, but I know many, many people who are. Ive dated several guys who were super into it, but for the past 4 Valentines Days Ive been with guys who felt the same way I do about it Meh.
But even if I don't really celebrate it, I will use it as an excuse to make one quick ass meal or dessert. This year I went with a very easy dinner of ginger teriyaki pork chops, corn, and mashed potatoes and a much fancier dessert of chocolate banana souffles. And boy howdy, these little buggers are delightful! Just the right amount of sweet and chocolate and fluffy banana goodness and oh so light on the big bad calories as far as delicious desserts go.
Now I wound up making 12 smaller souffles in my reusable silicone muffin cups as I do not own any ramekins at this time, but being able to eat 3 of these delights made me feel like I was being extra bad, even though I wasnt.

Chocolate Banana Souffles
from Skinny Taste
Ingredients
- 2 ripe medium bananas, mashed
- 2 tsp cornstarch
- 1/4 cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 2 large egg whites
- 3 tbsp sugar
- butter flavored cooking spray
Directions
- Preheat over to 400F.
- Coat 4, 6 oz ramekins (or 12 reusable silicone baking cups like I did) with butter flavored cooking spray. Place on a baking sheet.
- In a medium bowl, mash bananas and vanilla together.
- Sift cornstarch and cocoa powder over bananas and stir well.
- In another medium bowl, beat egg whites with sugar until they form soft peaks.
- Fold1/3 of egg whites into banana mixture. When incorporated, fold in the rest of the egg whites.
- Spoon mixture into ramekins.
- Wipe the top 1/4 inch collar of the ramekin to remove any excess batter so that the souffle will rise straight and place ramekins on a baking sheet.
- Bake at 400F for 15 minutes. Serve immediately.
Makes 4 servings.
