I think not having the time to shoot a set all at once could be interesting.
Keep a couple plants in whatever room you plan on shooting it. Take a couple pictures a day, over the period of a month.
As you add more photos, the plants will be growing in the background.
It'll be a subtle effect as we, the viewers, go thru the pics, but the plants will have some obvious growth as the pictures progress

If your going to be using your own server for the photo site I'd recommend using this http://gallery.menalto.com/ it works really well.
