Water is the only naturally-occuring substance that is found in all three states of matter. It's also the only naturally-occuring substance that expands when it freezes.

Beer is highly dependent upon water for taste. Most breweries use well water to supply their tanks. Based on the quality of water in an area, the beer naturally takes on different tastes.

For instance, pale ales originate in an area of England where they have predominantly alkaline groundwater (i.e. limestone bedrock).

Darker, heavier Guinness is the result of using extremely "soft" water that's slightly acidic.

Pilsners were born from groundwater that's fairly neutral, without all the dissolved solids (TDS) that are present in darker beers.

If any of my science teachers in grade school would've used beer to teach about acidity, perhaps I'd have paid more attention and gotten better grades... and then I could've been a science-wiz instead of a science-moron, and I could've majored in something like engineering instead of political science, which would make it easier for me to get a job after I graduate. But alas, no one ever did, and now I face this cruel world, with no knowledge of acidity, and with a worthless degree... surreal

Ah yes, acidity and beer is just the tip of the iceberg... Wrap your mind around this one: acidity and alkalinity are merely measures of the exchange of protons.
