Long time no update... what can i say? i've been cooking and hangin' as always - saw a movie at the Wex Wednesday that was part of a French directors retrospective... i love weird older movies, especially French cinema verite era ones.

Made this for the second time today... enough to feed a small town, (or me for a day or two).



Vegan Fajitas

1 packet (two servings) organic Tempeh *cubed*
2 Green peppers *diced*
1 white onion *diced*
1 large tomato, or 4 roma tomatoes *diced*
1 can black beans *drained, washed*
2 C rice
Olive oil
Cayenne
Chili powder
Black pepper
Chipotle (Ancho) pepper

*whole wheat fajitas
*salsa

Makes 6-8

In small saucepan, combine 2 Cups water w/ 2 Cups rice. Reduce until rice is soft and water is absent.

Saute olive oil, peppers, onions, and tempeh until onions are soft and light brown. Add spices (to taste) and cook additional
minute. Turn off heat and stir in rice,beans, and tomatoes as pan cools.

Fill in whole wheat fajita and top with salsa.

My mom is having a jewelry show with my Aunt next week. My aunt lives on a farm in WV wth her white water raft guide husband. I used to hang at their place when i was a kid. I think this is why ecology and food are cool to me...
