ok now so i decided against the greenbriar hotel due to the fact that i think they're looking for someonemore qualified and more experience. i dont have enough for me to justify to drive down there and spend like $200 on a road trip thats ok though...This morning I called my old executive chef at the Balsams resort (which is a great place to work and train at). A place where they will teach me as develop my culinary skills more I got a good basis, i know whats expected of my professionally, mentally and such. Plus they got visiting chefs dropping by all the time to work with the apprentices and to do demos. so i think this is better overall. the greenbriar is still in my mind though. I got an interview in april, i not worried cause i know what they are looking for and they need not to look any further. im really excited now i can barely hold my shit in. They got connections all over the world and great connections that are just amazing. I so stoked RRAAAAWWWWWWWW!!!!!!!

yeah i also thought about the greenbriar but they aren't really into helping the students. they don't pay and wont allow you to stay on premise. it also out in the sticks so you'll have to drive a ways to get there. it would be a great time if you could afford to do it though. i think you have the right idea going to the resort it seems to me that you would get a whole lot more out of it.
