Something easy for the 4th.
----> Watermelon Salsa - Like real salsa replacing tomatos for watermelon.
*4 cups watermelon, diced
*2 each limes, zest & juice
*quarter bunch of fresh cilantro
*2 each jalapenos -seeded and minced
* Salt & white pepper to taste
Combine the ingredients until well mixed. The natural juices of the watermelon will provide quite a bit of fluid. A normal salsa is blended, but since watermelon is so fragile this is not needed. This has a decidly different and enjoyable flavor to it. Serve with chips.
*For traditional salsa, simply replace the watermelon with a like amount of crushed or diced tomatos (canned) and blend until everything is well mixed. Additional jalapenos or better yet, poblanos, can be added for more heat.
*For queso, replace the tomato/watermelon with a like amount of canned cheese or velveeta. Saute your jalapenos (I use pblanos instead.). Add the rest of the ingredient and keep hot on the stove or better yet in a crock.
