Wow, I'm baking up a storm lately!
Last week: Key lime pie with homemade graham cracker crumb crust. For a dinner party me and my roommates had. Larry cooked Indian food. The guests brought a few store bought desserts, but people mostly ignored those in lieu of the pie.
I brought a coconut tres leches cake in to work. It's a Latin American dessert, mostly Cuban from what I hear. It was a special request from my dear friend/supervisor. I had never tried anyone else's before I tried baking it, which is unusual for me with a recipe. In addition, I revised it. Instead of flavoring it with rum and topping it with pecans, I flavored it with coconut cream and oil, and topped it with ground brazil nuts and pine nuts. Everyone raved about it.
Next weekend:
To bring to the Big Gay BBQ (aka my workplace's annual summer party), I plan to do two pies:
1. Brie, peach, and blueberry pie.
2. Spinach and 2 cheese pie, with sundried tomatoes, mushrooms, garlic, and fresh basil. The cheeses are aged gruyere and mozzarella.
Those are gonna be a couple hours' work, but I'm still looking forward to it!
