My favorite meal is the quinoa enchilada bake my mom used to make when I was a kid. It still is something I crave on random days and it is such a nostalgic memory for me. My mom loves me so much she makes me vegan enchiladas 🥹💗
We LOVE Mexican food and her take on my vegan restrictions is to DIE for. Honestly, a lot of it is just knowing it was made with love 💖

I once made a shrimp scampi pizza from scratch, then it wouldn’t fit in my small convection oven. So I had to run with it to a neighbor who had a real oven. We shared it, they loved it, good memory 😎
