So after fighting with various versions of xorg and wayland on a couple of headless machines (graphics card, but no monitor attached), I finally gave in and bought a couple of those fake monitor plugs (I bought one for DP and one for HDMI). I should have done that long ago! It worked on the first try and has been working for a few days now. No more faking EDID, trying to get the display drivers to accept nothing on any of the connections, etc. The dumb things were less than ten bucks each. I might buy a few more just to have on hand for future projects.
