Fine just to appease Juno this was my mock run of a appetizer I did for the wine tasting class I had last sunday. It's a Mascarpone filled Date with bitter sweet chocolate shaving, almond and garnished with a Caramel Simple syrup and chocolate sauce. The wine dude was gracious enough to save mine for the very last dish and this was paired with a 20 yr old Taylor Flagate Tawny Porto (that shit is $50/bottle), it was fuckin delicious.
(Dont mind the presentation that was just a dry run to see if I could get the caramel and chocolate to streak correctly)
