Dec 8 is national brownie day. Who cares why or how this came to exist. Brownies are f*cking awesome. I try to stick to a keto diet mostly, so to adhere to that I have a super special sugar free low carb recipe I want to share with all of you!
Raspberry Goat Cheese Swirl Brownies
Ingredients
For the Brownie Layer:
Unsalted Butter - 8oz (1 stick) at room temperature
3 large Eggs (preferably room temperature)
Vanilla Extract - 1 tablespoon
Sugar Free Chocolate Chips - 1 cup
Unsweetened Cocoa Powder - 3/4 cup
Almond Flour - 1 cup
Coconut Flour - 1/4 cup
Stevia granulated sugar - 3/4 cup
Instant Coffee Dry Mix - 2 teaspoons
Heavy Cream - 1/4 cup
Baking Powder - 2 teaspoons
Xanthum Gun - 1 teaspoon
For Cheesecake layer:
Goat Cheese - 4 oz at room temperature
Sour Cream - 1 cup
Lemon juice - 1 tablespoon
Swerve confectioners style sugar - 3/4 cup
Heavy Cream - 2 tablespoons
Salt - 1 teaspoon
For the Raspberry Sauce
Unsalted butter - 2 tablespoons
Raspberries - 1 cup
Balsamic Vinegar - 1 tablespoon
Stevia Granulated style sugar - 1/4 cup
Directions
- Preheat oven to 350
- To start the brownie mixture, in a large mixing bowl, combine the butter, eggs, heavy cream and vanilla extract. Whisk until well blended but be careful not to overbeat the eggs.
- In a separate bowl , combine all dry ingredients, including choc chips and mix well. Combine with above ingredients. If the mixture is too thick, slowly add a tablespoon of water until desired consistency is met.
- Pour mixture into a standard size brownie pan that has been well coated with butter or spray. You may also use parchment paper, but ensure that the parchment paper has also been coded with nonstick spray.
- Bake brownie mixture for 15 minutes at 350°. Take brownie mixture out of oven and let it cool.
- In a large mixing bowl, combine all ingredients for the cheesecake layer using a fork, do not use an electric mixer.
- In a medium size sauté pan, melt 1 tablespoon of butter on medium heat. Add the sugar and raspberries. Once the sugar and butter have dissolved and melted into one another add the balsamic. Cook until any excess liquid has been dissolved.
- Pour cheesecake layer on top of the brownie mixture. Then pour the raspberry topping on top of the cheesecake layer, and using a spoon or fork lightly blend in, creating a swirl effect.
- Place back into oven and cook for an additional 15 minutes. Or until fully cooked. Cool for at least 3 to 4 hours before serving. Brownies may be frozen and quite possibly might taste better that way 😉
