Well aside from the fact we get evicted in a few days, things have been looking up a bit. I've managed to move half of my belongings out and store them, still got some more to do but I'm getting there, just hope I can find enough friends houses and places to store everything until things get sorted.
My pole dancing lesson on tuesday went really well, I'm having to think less about what I'm doing wink I was asked if I could work this week but I am currently signed off sick from my other job so I can't start working anywhere else until thats run out and my doc says I can go back! Frustrating 'cause I really need the money right now, I have been supporting 2 people on my part-time wage for ages and it sucks, although at least I can see an end to it now. smile
Yesterday I baked some chocolate butterfly cakes mmmmm...

Chocolate Butterfly Cakes

4oz (100g) Soft Margerine
4oz (100g) Caster Sugar
2 Eggs
3oz (75g) Self Raising Flour
1oz (25g) Cocoa Powder
1 teaspoon Baking Powder

Preheat oven to 200C/400F/Gas 6. Place about 18 paper cases into bun tins. Mix ingredients together in a bowl until the mixture is smooth. Spoon the mixture into the paper cases so they are about half full. Bake in the oven for 15-20 mins. Leave to cool on a wire rack. Cut a slice from the top of each cake and cut each slice in half. Pipe a swirl of butter cream into the centre of each cake and place the half slices of cake into the butter cream at an angle to resemble butterfly wings. Dust cakes with icing sugar to finish.

The butter cream icing is just cocoa powder mixed with a little hot water, then butter and icing sugar is added, I didn't actually measure the ingredients but a recipe I have says to use the following (however you probably only need half that amount unless you wanna make yourself sick puke ):

2 tablespoons Cocoa Powder
3 tablespoons Hot Water
6oz (175g) Butter, softened
12oz (350g) Icing Sugar, sifted
