I'm doing some research for a paper that I hope to get published and recognized by folks like Michael Pollan. It's basically a damning of industrialized beef production and championing of locally produced animal proteins. Here is something to whet your appetite and tell you why I think this is sooooo important: 80% of the US beef supply is controlled by 4 companies. Sound familiar? This is seriously fucked up.
