You are now officially my hero. Kindred spirits indeed! Oh, how I wished to be doing ACT UP and Queer Nation back in the day. I was in college at the time and found out about everything too late. Alas. If only the work was finished adn there was not so much left to do! I worked for the CDC STD/AIDS hotline before it was run by automotons giving out only the most basic information.

the recipe is as follows:
1 yellow onion, diced small
1 green bell pepper, seeded and diced small
2 cloves garlic, minced
2 tablespoons olive oil
1 package Yves "Soyrizo" vegan chorizo sausage
1 package vegan chicken strips (I use LightLife)
1(14.5 oz) can stewed tomatoes
1 cup vegetable stock
1 teaspoon Cajun blend seasoning (I think the one I used is by McCormick)
1/2 teaspoon thyme
1 bay leaf
salt and pepper to taste
Frank's Red Hot to taste
2 1/2 cups brown rice, cooked
Directions:
Heat oil in large skillet. Saute the onion, celery, bell pepper, and garlic over medium heat until soft.
Add the seasonings, and Soyrizo, Be sure to stir well so the soy doesnt stick.
Add the tomatoes, vegan chick strips, stock, and rice, stir well. Reduce heat and simmer until thickened.
Makes: 4-6 servings
Also, I would try adding some okra, and maybe some zucchini. You could also try using some sliced up Tofurky Italian Style Sausages... I think those would be good but I haven't tried it yet.
