Swiss roasted potatoes are yummy and easy:
some russet taters, sliced crosswise end to end almost all the way through, lots of butter or margarine, garlic, slow roasted in a big roasting pan for a while at about 325c till soft, then about 5 or 10 mins before serving, cover with parmessan or any preferred cheese. pop back in the oven till cheese is melted. You can spice them up with cayenne or paprika as well but the basics are the bestest some times.
