Niven... Niven... I started with the Ringworld Series, which is one of his most popular works. Niven has created a few universes, and a large part of his work takes place in the Known Space universe. He's such a fun author, I think you could start anywhere. But I totally recommend starting with the early books in the Known Universe series. I wish I'd started that way. Just type "Larry Niven, Known Space, timeline" into google.
