One of my best chef friends came in for dinner tonight. I felt totally nervous because he is an awsome chef, way out of my league. I wanted to make a good impression but it is hard to impress somebody that good. I didn't go over the top but threw in a little flair. One more day and I'm done yipee. tongue

I thought you made dinner for one of your fellow chefs?
I was just wondering how that went...

I can headstand in the middle of the room for the most part without problems...I still fall over sometimes but tend not to hurt myself -- which is good.

Handstands, definitely against the wall for now.

Well, here I go to class! Wish me luck!

Two days left, two days left, only two days left. The next couple of days should be a country club. Then off for five. I have to come in for a couple of hours on a couple of days but that's nothing compared to having the holiday off. My friend is trying to talk me into the Dharma Punx tattoo. Maybe on my wrists just...

I think tonight was the slowest night of the year. It actually went faster than I was expecting though. I'm excited that in four days I'll have five off. Working on all of the holidays used to suck. What kind of degenerates go out to a casino on christmas eve anyway. I guess people who don't celebrate or have families to spend it with. I'm...

so are you gonna get it tattooed on you or not?!

God damn you and all your time off. I have 2 days off for Christmas, and I have to spend half of that travelling to see my parents. Bar jobs suck.
Your christmas dinner sounds almost good enough to make me not be vegan anymore wink
Get the tattoo duder, maybe not on your hand, but get it...

One of my old sous chefs just got his first chef's position and invited me in for the soft opening of his restaurant. It was incredible. I felt like a proud father of a kid graduating med school. It's a steak house and the food was great. I remember him saying when he was twenty that he wanted to be a chef by the time...

Are you giving out the recipe for Richardree? If so, could you send it my way? I once had a recipe for kitcharee (did I spell that right?) but I lost it. I heard that when Indians fast they eat it. Have you ever done a fast? The first time I ever tried a fast I of course went Gung Ho and did the "master cleanser." Lots of water with lemon and black pepper. After one and a half days I was throwing up nothing but bile and felt like I couldn't get out of bed. How did Gandhi do it?? Now, once a year in the spring I do a "fruit fast" where I eat, you guessed it, nothing but fruit. Talk about a good way to lose weight and be healthy about it.

As far as I know right now there aren't any Bikram classes in Milwaukee. I think Madison offers some. We do have some classes here called "hot" yoga. I figure it must be the same thing roughly. Sometime, perhaps, I will try it. This Sunday I am taking my first First series Astanga class with Gia. I am excited -- as usual.

Here I am blathering on again...what is the name of your restaurant? A friend of mine just got back from Vegas. We are both interested...

miao!!

I am excited to hear how the Anusara class goes. Even though I know yoga philosophy says where ever you are in your practice right now is where you are supposed to be, I just don't know if I will ever feel physically or mentally ready to take a class conducted by a modern day yoga "celebrity." I just feel so beneath these people. That is so wrong isn't it? Are you nervous at all?

I will have to make a note of your restaurant for when I get to visit Vegas. Which I hope will be next year some time. Speaking of...have you ever attended the Viva Las Vegas rockabilly weekender?

Thank god I'm off the next two days. There has been so much drama in my kitchen you could cut the tension with a knife. That's what happens when it's slow, idle hands and all that. Sometimes I wish I didn't like all of my cooks so much, I could just fire their drama queen asses and tell them to get a job in a...

My restaurant is being overrun by cowboys the past few nights. The national finals rodeo is in town and it's like we're in freakin oklahoma or something. I can't believe how many cowboy hats I saw tonight.

Have you ever heard the saying "Life is what happens when you are making plans for something else"? It's funny, I would say that most of my best career moves have taken place when something totally out of my control occurs. I was a laid off my first real job about six years ago. I ended up taking the first thing that came my way...something I had no experience in, then the place I got laid off from was eventually re-started by former employees and now, here I am, back where I started out...yet way better off than when I began! Life is crazy sometimes.

I never finished reading Kitchen Confidential, unfortunately. I don't know why. It was definitely interesting. And he certainly has a type A personality; it's no wonder he is so successful. I've heard he has quite a reputation these days for eating some questionable things. I don't know the details...not sure I want to. I can't even get through one episode of "Fear Factor" with out running out of the room.

It sounds like running your own restaurant is just way too much work. You're probably smart not to attempt it. Speaking of, did you ever watch the Restaurant? What do you think of DiSpirito? I know nothing about the biz but he came across to me as if the restaurant was just his play ground. He didn't seem to want to address the serious problems, he wasn't cooking...it seemed to me like he just spent most of the time shmoozing the patrons.

I think my horoscope is going to come true today, and it's not good. I rarely read it but opened it up out of boredom last night. It said something about struggles at work. I just had a meeting with the bosses and I have to implement a couple of not very popular policies regarding music in the workplace and drinking on property after work....

Thanks a lot for the information on yoga nidra. It sounds very interesting. I feel like I really need to start practicing meditation on a regular basis, but it's hard to know where to start. It seems to me a lot of people who are into meditation have come to it through some trauma in their daily lives that they are trying to deal with. I'm not going to say that my life is perfect, but I'm genuinely happy with how things are going -- I'm just a roll-with-the-punches, grounded person naturally. Sometimes I think because of that the idea of mediation is harder for me. Does that make any sense?? My practice is the closest I get to any type of meditation for the time being but I will definitely check out the nidra CD's at Amazon. Thanks again!

Oh, just curious, what kind of restaurant do you work in?
shiva8:
Funny. I had the same experience when I started taking yoga classes. I had been doing it at home and thought I had a good grasp on how it was supposed to be. Then I went to class and I was like, man, I must not have been doing this right before...it's harder than I thought!! Needless to say, the growth in my practice has been vast just since I started taking classes in July compared to all of those years I was attempting it at home alone. I am interested in sitting meditation tho. In fact, I think the first week in January I am going to attend the local Zen fellowship and have them introduce me to zazen. Again, I've read a lot about proper zazen techniques but I want to have an experienced teacher show me so I know I'm doing it correctly.

So, I'm interested, since cooking is another one of my passions...how do you like being a chef? And do you hope to open your own restaurant one day? Oh, and what do you think of Anthony Bourdain? I read parts of Kitchen Confidential and definitely have a vibe on him.

Why does it feel like I'm never, ever going to catch up. Either I'm overwhelmed by what I feel needs to be done, or I ignore it and feel guilty, thus not enjoying the rest of my life. I'm not talking saving the world, more like cleaning my garage! I guess it's really not that important, and if it bothered me enough I would do...

Tomorrow is the last day of class. I can't believe the semester is over already. I still cant believe I am teaching at UNLV. Just one yoga class, but still. I'm kinda glad I am going to have those two mornings a week free. I get to go to other peoples yoga classes!

I am just so suburban. I spent all day putting up my Christmas decorations on the outside of the house. First I had to blow out the rock in my desert landscape with a Black and Decker blower/vac. Then it was onto the ladder to put up the lights and then the reindeer family with the sleigh and finally the giant inflatable snowman. I don't...

If you are suburban, then I am domestic.... yesterday, I bought a brand new vacuume, and was super excited about it. I also took your advice and ended up going to Sur La Table to get my mandoline... It wasn'y that much around 35 bucks...... thanks! I would be up shit creek with out one... well, not really, but prep would certainly take a whole lot longer......

Sorry, but your number (and my map) fell victim to a horrible coffee accident as I was swerving around some idiot on HWY 58 near Barstow.
I'm bummed we missed hooking up, and in general, I was less than impressed with my trip.

It got so cold in the last week. I guess no more shorts 'til spring. I like the cold but hate being cold. My fucking kitchen is freezing. It has no heaters, just the stoves and nothing is on when I come to work. I wear long johns for the first few hours and go stand over the burners when I'm really cold. eeek

happy thanksgiving......

hey my mandoline broke... can I just get one at a kitchen store? what do you recommend? my last one was a gift.... It was a zliss.... are they easy to find?

DV, being of service is the whole thing, isn't it? I had a guy working for me 5-6 years ago that couldn't comprehend doing what we do as a career; he said it had no purpose. The chef looked at him and said "we do have a purpose". Dipshit asked him what it was and he replied with three simple, eloquent words: "Feed the people". It doesn't get much simpler than that.

I went christmas shopping today. Earliest I have ever done it. quit when I wanted instead of having to press on and hate it because I'm doing it at the last minute. Found alot of stuff I wanted but resisted the temptation to blow money on myself.

Got your email.
I lived in Vegas from 93 to 98 and I go back almost every year for this convention. My mom lived there from 90 to last September, so we have made plans to make it to the convention as a 'holiday' tradition every year.
While it's too late this year, maybe nexy year I will bring Ivy with me.
In any case, I got your digits. I'm sure well meet there sometime over the four days.
Keep Trudgin'
