This was one year ago. My Restaurant was just reopening. I found myself signed on as a Deckhand on a local Crab Boat, the Corregidor. I got to face my fear of the open ocean. I also got to find out if I could do the work.

Last Saturday was an a realization of achievement for myself with my business. This photo, in an instant, reminded me why I love the path that I have chosen. It was not a perfect day by any means. But even with gaps and challenges my crew and I still achieved great successes.

At home I love my Shun. They have great balance and hand feel. The steal needs some babying on the stone. But don't we all. At the shop I like the little red serrated Victronex. Can't spell it for shit. But, I like soft steal on the line. It's easier to get an edge back quick and make the cut I need. That and I don't have to worry about a dishwasher dropping my blade on the tip. Happened to my 10" Trident. I was Pissed. My fault for bringing it in though
