Decided I don't blog enough so thought I'd have a look at the topics from the blog homework that @rambo @lyxzen and @missy create. Today the topic is, what are 3 things you think everyone should know how to do?
I'm far too practical for my own good so my 3 things are all about how to survive/live/keep going if the apocalypse happened.
Number 1! Cook
Everyone should know how to cook something. It doesn't need to be fancy, or michelin star worthy, but you should know how to make edible food. By far my favourite food to cook is my low-fodmap stuffed aubergine.
Aubergine
Mozzarella cheese
Mince meat
2 or 3 veg of choice, for myself I picked:
- Carrot
- Courgette
- Mushrooms, these are not low-fodmap but I find I can eat them every so often.
Pre-heat your oven to 200C (fan) and cut the aubergine in half lengthways.
Carefully cut a border inside each half around 1/2 - 1cm thick. Use a spoon to scrap out the aubergine flesh and put this to one side.
Brush the aubergine 'boats' with a tiny bit of oil, season to preference then place on a baking tray and cover with foil. Bake in the oven for 20 minutes.
Chop the flesh you scooped out and place to one side.
Prep your other veg and pre-cook if needed (i.e carrots)
Brown mince in a frying pan then add the chopped aubergine and other veg.
Once cooked through, take off the heat if before the 20 minutes for the aubergine 'boats'
After the 20 minutes the aubergine 'boats' should be tender, remove from the oven and reduce the heat to 180C (fan).
Stuff the 'boats' with the mince and veg mix, season to preference then add mozerlla (grated or sliced) over the top.
Bake in the oven for 15-20 minutes or until the cheese is melted.
Number 2.....Smile
Take time to learn how to smile. I'm not talking about smiling for the sake of it, I'm talking about learning how to get a huge gigantic grin on your face that you can't stop! Find out what makes you happy and work out how to get the most of that in your life. Try new things, rekindle old things. Nothing is worth more in life than being happy and being able to smile every day.
Number 3!!
I'm a big fan of this one. Everyone should know how to relax. Take a step back and just reflect, or be silent or just breathe. Relaxing may be to have a night out, or it might be a trip to the spa, or maybe it's sticking your headphones on an listening to music. Find your place to relax, even if it's going into your own world on the commute home. Life doesn't need to be so serious and go go go all the time. It's ok to take time for yourself and just enjoy being you in that moment. I rarely remember to do this as a mum and working full time whilst also struggling with a disability. It's something that would make a huge difference to my life and I'm working on doing it more.
