Ref espresso blend... my Italian grandfather who had the machine in his cafe....he would grind varietals for his customers.. Or use one espresso "bean"....since he mastered his craft in Italy I tend to trust what I remember....regarding who defines what espresso is..I view all "experts" as anal- retentive pedantic boors..opinions are like assholes, everybody has one!
