My day started off well. Juners and me went roller-blading. She LOVES that and it always make me laugh to see her jump around and sprint off running with me in tow. The people we blaze by seem to think it is pretty cool too. I think we are on to something. The afternoon did not go as well, unfortunately. I finally got my oil changed after my long-ass road trip. That was easy enough but I learned my front and rear brakes are in need of replacement and both of my axle boots are busted. I knew brakes had shoes, but I did not know axles had boots. What is next? Loafers on my struts? Instead of getting the work done, I decided to go shopping. Retail therapy style. I went to Office Depot to get a desk lamp for my home office. All I want is a simple chrome/silver architect lamp. You know, the one that clamps on to the surface and has a long arm with a single joint....well, of course they did not have one. Snort. So I hit the bookstore next door. More snorting. Why is it that I keep going back there? In the year that I've been visiting the place, they have had only had one item in stock that I wanted. Today, I was in search of two art books and another book on gifted adults. Like I said, they did not have them; but if they did, the art books would have been in the biography section and the gifted adult book would have been in the family and parenting section. What the?
So yes, I came home empty-handed and disappointed. The solution? A tasty dinner: Roasted chicken with vegetables and sauce:
- 1 5-pound chicken
- A fistful of herbs: sage, rosemary, thyme...
- 1 onion, cut roughly
- 2 whole garlic cloves
- 1 turnip, peeled and cut in half
- 2 sweet potatoes, peeled and cut in half
- 2 large carrots, peeled and cut in half
- 1 14 oz. can chicken broth
- salt and pepper, to taste
Stuff the bird with the herbs, onion, and garlic, then place in a roasting pan. Arrange the veggies around said stuffed bird. Pour the broth over the whole shebang and baste. Season the skin of the birdy goodness with salt and pepper. Bake at 350, uncovered, basting every 15 minutes with the broth stuff for about an hour. Serve it up with chunks of vegetables and use the pan juice as your sauce.
Because if retail therapy doesn't work, you can always stuff your face.

*Post Meal Update: It takes way longer than an hour at 350. The veggies rock, especially the turnip; but the bird can use a little something.......maybe two fists of herbs?
