The big ones on top are kahala and ulua. Grouper and gray snapper.
The ones on the bottom are like little red snapper. I think the Hawaiians call them oweoweo.... just scrape the scales off, gut them, and either fry them in a pan with some oil, steam them, or grill them.
Is there a trick to getting the scales off a red snapper? Last time I tried it the damn things flew everywhere. Are the smaller ones easier to deal with?
