Actually, two of the three aspics are vegetarian. One is a yellow pepper aspic and the other is an aspic made to taste like a bloody mary. The third is a shrimp aspic. Most gelatin these days is derived from seaweed (agar-agar, if I'm not mistaken), not from boiling hooves. Other than helping prepare some of those, though, I had a decidedly non-vegetarian day. Cooked off 40 live lobsters and cut up 5 sides of salmon. I don't have a problem with the killing part, but lobsters look too insect-like for my taste and generally creep me out. I kept thinking I saw them moving even after I'd boiled them for 7 minutes. Nightmares to come, I'm certain.
