Oh, man, ceviche is fantastic. Here's how to make it:

Take all that stuff I mentioned (or other seafood items of your choice, like conch or other types of fish or whatever), except for the oil and vinegar. Put it all in a big mixing bowl and cover it with citrus juice -- I do 50% orange, 25% lime, 25% lemon. Let it marinate overnight. Drain it, toss in some vinegar and oil (I recommend the stuff I used -- raspberry red wine vinegar and olive oil), and you're done. The acid from the citrus juices cooks the fish. Just make sure you've got enough juice in there to get to all the fishy bits.
