Your Dad sounds like a world class tough guy. Good for him. I'm glad he's doing OK. It puts things in perspective. No matter how hard things may seem to be, theres always something harder to overcome, and someone who's tough enough to do it, and be an example to you in the times you're not feeling up to it. I have nothing but good thoughts for him, and I hope he's OK.
On a totally seperate subject......
There's a book you NEED to read (If you haven't already). It's called "Kitchen Confidential" and it's by Anthony Bourdaine. He's one of my personal heros. It's pretty much the only book I've ever read that "got it" as far as being a Chef is concerned. Whenever I question my career choice, I read it again, as a way of reminding me that it's just as fucked up for everyone else too. I'll send you an Amazon link to it if you like. I'm sure I spelled his name wrong.
Regardless, good luck to your Pops, and I hope the kitchen world isn't kicking your ass as bad as it has mine for the last 17 years.
