got all my paperwork filled out at Avondale today. Went in for lunch and to take care of that stuff. Lunch was handmade pasta in a veal and port tomato ragu with aged jack cheese fresh basil and a glass of Pinot Noir. super good. I sat right near the doors to the patio with a great view of Beaver Creek.
reading over the packets they gave me about the restaurant i can tell that this is going to be a challenge. They seem to have their shit together in every aspect i found lacking at the place i've been working. they have an extensive eco friendly program that will be entirely new to me.
I feel that this place will have the level of professionalism that i've been seeking and expectations are going to be high. i hope i'm proven right.
I also met the Owner of the restaurant today. he just happened to be there when i stopped in. he's kind of a badass in the Vail Valley with 3 successful restaurants.
after lunch i grabbed my roommate's puppy and took her for a hike up Paulie's Plunge. Its a trail that goes from behind my apartment complex all the way to the Rose Bowl at Beaver Creek. In the summer its hiking and biking and then in the Winter you can ride down this narrow ass gauntlet back to Eagle-Vail. Its super fun to ride.
