You just pickle the stems. They say it makes a good sandwich topping, which I can appreciate as picked beets are delicious. (well all beets are)

Wanted to post a few days ago, but was distracted by a baby. :) We got a good ground soaking rain for a couple of days. Water tanks are full again and the fields are beginning to sprout. More tilling to do and we´re hoping for some more sun and warmer temps. Then things should really take off.

@spiderman66 I've been in the southwest a year. Last year I planted things because I couldn't live without it, but after a summer of growing here, where it literally NEVER fucking rains, it just felt unsustainable to me. It still does. Part of why I didn't plant was instability of my living situation, but the other part was the fact that I felt like I was stealing life saving water from future generations just for fun.
spiderman66:
@gadget - I know what you mean.  We lived in Burgundy a couple of years back and had a large garden.  Even with the winter rains, we´d manage to drain the well once or twice a month.  Luckily, there was enough ground water that it would refill in a couple of days.  In the Jura, the dry spells last a week or so and then we get another week or two of showers, so watering is more a short term solution.
