Writing this down for posterity. Dad's Caribbean jerk spice recipe. This is a starting point, measurements are in parts, experimentation must be made in order to achieve perfection. Unfortunately you really have to wait until the jerking process is complete to taste the results, since the long cooking process drastically alters the flavor.
