I've been working on maintaining a vegan diet for 30 days in order to see how beneficial (or not) it would be for my overall health. Not primarily interested in losing weight, but in helping my heart health, blood pressure and cholesterol. Heart disease is rampant on my mother's side of the family, nor is my father family in amazing health. I figure it's never too late to start changing for the better so I'm giving it a whirl.
I feel like part of this diet change comes from exposure to certain information and lifestyles from where I work. I won't say where but it rhymes with "Fhole Woods". I've seen fellow coworkers and guests change their lives in incredible ways simply by adjusting what they were taking in via their diet. Whether it's gluten-free or vegan or juice fasting for a week, people's health undergoes many positive transformations based on what I've seen.
It has now been five days since I've consumed anything with meat or dairy. There have been a couple of difficult situations, mainly when going out to eat. Otherwise, I've just had to be slightly more aware of ingredients. Egg and milk ingredients are EVERYWHERE! My man is also joining on me this quest, but only after he completed a 3-day juice fast with a salt water cleanse at the end. I admire his will-power!!!
I made this vegan pineapple fried rice for dinner last night and it was delicious.
