I think I'm going to warm some chopped peppers and tomatoes in olive oil. Then pile them on gluten free whole grain bread topped with fresh mozzarella slices melted in the oven.

I'm gonna have to try doing some kind of meal prep like that. Maybe try it for a week at least. I've got the weekend covered though, so that helps. It's just remembering to take food out of the freezer in the morning that usually ruins my plan.
