I don't understand why a republican friend of mine is against tightening the gift/exchange tax policy. the first 5.25 million a piece, 10.5 married, is exempt. his family doesn't have THAT kind of money but they're well off. 5,250,000.00, nobody needs that much money let alone more. 200k should be the max, do any of you need more than that to feel secure in your...

why not have a migraine today. It’s only Saturday with a ton of prep to do. So far I've taken ibuprofen, xanax, norco, alcohol and caffeine. Last ditch effort is going to be fentynal. If all else fails I'll have to purge. I love my brain but am frustrated when it decides to misfire.

They cripple you! I hate them

The list chemicals ended up including a cigarette tipped with a small amount of keef and meth, 15 mg of morphine and 500 mg naproxen. The miss-fires subsided and I was able to function without vomiting or leaving work to hide in the dark.

as a respectable human being. I greatly fear that 5 years in san diego has turned me into just another statistic. I think I might have become a weather pussy. I went through 4 winters here with nothing more than a long sleeve thermal shirt. Tonight I pulled out my philly/chicago winter coat just to smoke a cigarette. have mercy on my poor soul.

Who me? A sweetheart?

Hahaha. Grew up in SD. It ruins you for places with real weather. I feel like death now that I'm living in a city with real winters. So jealous of you. <3

tasting menu is due tomorrow and I have nothing. No theme, was on the fence about dips, thought pannises in feta and lemon sauce, bagna cauda with local albacore, but that's it. I get frustrated when so much time can be invested and yield nothing. I think this week I earned a bye, 5 private parties in 7 days besides service. Maybe it should be...

I spent some time with my family and enjoyed the rare occasion that my schedule matches up with the rest of the world. I also got to be a small part of a meal put together by some very talented friends/chefs for a our SO's and a few coworkers. I feel like philly's chef community is more incestuous and everyone knows each other better. So...

it is 4am and what is between me and sleep is you, I hate when we fight like this. We were just fine 5 minutes ago and suddenly there's a problem. I don't understand why you have to be so specific and rigid. I spend hours online looking for less stressful ways to deal with the sense of entitlement you have, if you aren't included...

Mystery I always fun
cheframbo:
It satisfies me as a chef because it can be a real challenge. For the guest casually perusing the menu it isn't obvious or forced, just a thoughtful progression of dishes. The fun really  is being told by the server that every course is a well known sandwich, just put together differently.  Nothing crazy Alinea out there, just a way to make my job more interesting.

I'm not against a holiday devoted to being thankful for what we have. What I don't like is that I'm a chef and this is THE food holiday.

1. people worry more than they should about cooking a bird

2. whoever is cooking gets really uncomfortable when I'm introduced as a chef, like I'm going to judge them

3. I go from guest to bailing...

Cool, you like working with seafood huh?
cheframbo:
I was the chef of a seafood restaurant for 2 years which helped with a cephalopod based menu. The tasting menu has to change every week. Birds are my favorite thing to cook.
